Vegetable shakshuka eggs
After a long and stressful week at school, weekends call for a break… so why not treat yourself to something a little special (that is, if you have the patience to let it tick away and do its magic).
Unlike the classic shakshuka eggs (essentially eggs simmered in a tomato sauce with other lovely spices and chilli), this version from Jamie’s Veg cookbook contains nourishing vegetables: think pumpkin, potato and three types of capsicum! Plus it’s filled with fragrant herbs and spices, and a dash of harissa. What more could you ask for at the end of the week?
