Mini French tarts
So you don’t want to devour a whole a cake, but you don’t want something boring (like a gluten free, dairy free, sugar free slice); I’ve got the solution.
These mini and moreish French tarts are the perfect little bite to go with your cup of tea. They are not too big so they make for a great little treat… and they certainly deliver big on flavour!
I have made 30 of these bite-sized delights for a party, but you could just make six to ten if it was for afternoon tea. Here, I have made two flavours: one, homemade lemon curd with a fresh raspberry on top, and the other a homemade crème patissiere (vanilla French custard) with an array of sliced fruit on top.
Alternatively you could do orange or passionfruit curds instead of lemon, or perhaps make a chocolate custard. Get creative!
