As you start to make the most of the warm weather, delicious ice creams and refreshing beach swims, now would also be the time to reflect on the succulent food Summer tends to bring.
Likewise, I bring you these amazing mango prawns. Sticky and sweet, they are perfect for the Summer weather, because no one wants to spend hours in the kitchen when you could be chilling by the pool! Pairing curry powder with mango chutney seemed very interesting to me, and also turned out to be very delicious!
You have the sweetness from the mango chutney, the layers upon layers of flavour that have gone into the curry powder (which adds spice!), the caramelised bits developed on the prawns, the zing from the lime and the crunch from the crispy garlic!
With only five ingredients, it’s simply amazing!
