Lemon, Chia, and Ricotta Muffins
Sometimes I think we underestimate the taste of lemons. When we see one, we just automatically think; ‘Yuck, that’s too sour!’. But what if I told you there’s a technique that makes them taste delicious? The answer is muffins.
Mixed with ricotta for creaminess, and chia for that extra boost of fibre, this is taking lemons to a whole new level. If you’re the healthy type, skipping the sugar and lemon drizzle is probably the best option. But I recommend it for making them taste extra special.
So why not use that tartness to your advantage, and give lemons a great reputation!
