Fig and Almond Cake

What happened to Summer! 3 months ago, it was December, where there were big celebrations of Christmas, New Years Eve and the start of the season. This ‘Summer’ has seemed to just slip away, along with the holidays and WARMER WEATHER. Those beautiful beach days basking in the sun and walking to the ice cream shop have gone way too quickly. It’s already the 1st of March and now we are reluctantly bringing in the cooler months.

To wish Summer a warm goodbye, why not make this tasty fig cake. This beautiful fruit has only a short season of Summer and early Autumn. This gives all the more reason to make the most of this fresh, seasonal produce and cook it into something memorable. The recipe gives the option of some sticky caramel figs to go on the side but I chose not to (by all means you can do this!) Figs are not used enough and paired with the delicious almond meal filling turns it into something very special.
