Sesame Salmon Noodle Salad
This is definitely one salad to add to your food repertoire. It has everything: salmon, zucchini, cashews, sesame oil and lots more interesting but well-paired flavours to make this the most delicious salad ever. I love the freshness of the whole dish and how it looks so pretty on the plate. The cashews add a crunchy textural element, while the sesame oil adds a bold and flavoursome element. The rice noodles act like a sponge as they give the salad body, and soak up all that delicious dressing.
Not only is it delicious, it is also extremely healthy. The smoked salmon is slightly sweet and salty, and adds your daily intake of omega 3. The zucchini, salmon, cashews and dressing also add lots of bursts of colour. This salad takes no time at all, yet it is turns out to be something special. The recipe calls for macadamias, but I used cashews instead. Give it a go, it was a no-brainer for me!
