Freekeh and Pistachio Tabouli, with Blistered Cherry Tomatoes, and Marrocan Spiced Chicken
Normally, when people see or hear the name ‘freekeh’ they stop and think “what’s that?” Freekeh, is a grain that is made out of wheat, it is only used in savoury dishes, and contains high fibre, protein, and supports healthy digestion.
In the variety of ways it can be used, I find freekeh is delicious in a salad. In this recipe, it has been combined with fresh herbs, nuts, roar crunchy vegetables, seared chicken (for extra protein), and some oven-roasted vine ripened tomatoes (to give the acidic flavour, but melt in the mouth texture).
I truely believe this is a dish that combines sweet, salty, acidic, but most of all healthy ingredients, and that’s what makes it such a delicious plate of food.
