All-day Mexican breakfast
The perfect setting: a picturesque view, a sunny Sunday morning, a long weekend, a chance to sleep in and almost not a care in the world- what’s missing? A beautiful breakfast of course! And it doesn’t sound too bad either…
This breakfast is filled with protein-packed eggs, and black beans; as well as beneficial avocado, which is good for the heart. It’s finished with a drizzle of olive oil, squeeze of lime and a scattering of chillies (I’m salivating). I doubled the quantity to serve 4, as this dish serves 2. I’d also suggest to give it a good seasoning as the result might be bland. Despite all this, you can serve it with sourdough, tomatoes or just about anything Mexican! Anddd… it will give you the biggest boost of energy!
Forget cereal, this breakfast beats it in so many ways: whether it be taste, appearance, health or even time, I guarantee that it will leave you feeling satisfied- and post-breakfast you won’t have a care in the world!
