Sesame salmon noodle salad

Ingredients

100g rice vermicelli noodles

3 large zucchini, cut into noodles using a spiraliser

250g hot-smoked salmon, skin removed, flaked

50g baby spinach

1/2 cup fresh mint leaves

55g (1/3 cup) chopped salted macadamias (or cashews)

Sesame dressing

1 tablespoon tahini

3 teaspoons sesame oil

3 teaspoons light soy sauce

3 teaspoons Obento Mirin Seasoning

1 teaspoon honey

Method

Place vermicelli in a heatproof bowl. Cover with boiling water. Stand for 3-4 minutes to soften. Meanwhile, for the sesame dressing, whisk the tahini, sesame oil, soy sauce, mirin and honey in a small bowl or jug until smooth. Drain vermicelli and squeeze out excess water. Divide among serving bowls. Top with zucchini, flaked salmon, spinach and mint. Scatter with macadamias/cashews and drizzle with sesame dressing. Season and serve.
